In the first part of the book, Genise Bullock-Prado explains the stages of candy-cooking in great (and humorous) detail. Even if you’ve never tried anything like this before, she breaks everything down and explains how and why, which is good for both beginner cooks and curious chefs.
Then come nearly 100 recipes spotlighting sugar, including lots of candies and creams, and baked goods selected to show them all off. The level of the recipes ranges from simple (Caramel Apples) to the more intricate (Tiramisotto Coffee Caramel Tart), but they are all within the reach of a determined beginner with a thermometer, a good pot, and patience. I have always been a dessert person. I usually find myself at the local grocery store bakery or ordering an extra to bring home from the local restaurant. My children purchased this “sweets” cookbook for me hoping I would take to making desserts instead of running out to buy them. I found all these amazing recipes that were simple enough for me to make myself and I am having a blast doing so! Recipes to make homemade candies, better then anything I could ever buy! All you need is a good thermometer and a ton of wax paper!
